7 kg tomatoes
Basil to taste
Boiling water to sterilize jars

Preparation time: 15 minutes
Cooking time: 30 minutes
Shelf life: 2 years

Preparation:

Chop and blend the tomatoes until pureed, then pour into a saucepan and bring to the boil.

Skim off any foam that forms on the surface during cooking, then continue cooking for a few more minutes before turning off the heat.
Prick the tomatoes with a fork and place in sterilised jars. Fill the jars with tomato puree.
To seal, immerse the jars in boiling water in a saucepan to create a vacuum. Store in a cool, dry place.
